Remove the silver skin from the beef back ribs. If it's stubborn, use the back end of a knife and some paper towels to get started. Rub the entire surface of the ribs with olive oil. Generously apply the rub, being sure to get both the top and bottom side of the rack. Place in smoker and smoke at 225 degrees Soak corned beef in water to remove excess salt for at least 4 hours (overnight is better). Dry meat with paper towels and place into a foil pan. Cover meat with Dijon mustard and Jeff's original rub. Massage the rub/mustard to cover the entire brisket flat. Set up smoker for cooking at about 240°F with a mix of hickory and peach or other. Vinegar adds brightness to sauces and bastes and provides a necessary acid that acts as a solvent to reduce the greasy characteristics of some barbecued meats. Herbs and Spices. Spice : Spices play a healthy and hearty role in the seasoning process I tried the rub on a beef brisket and some beef ribs the other day and our entire family enjoyed it tremendously.
